What report do I need to run to give me any Suppliers we have used over a certain period (eg last 3 yrs)

Unfortunately, there isn’t a specific report that provides a list of suppliers for a selected period. But you can try the "Transaction List by Supplier" which displays all transactions within a specified date range and can be filtered to include one or multiple suppliers.
It also allows additional filtering based on other information or columns.

You could start with an itemised Profit and loss, modify to just show expense accounts. I’m sure there are many reports you could try but that’s where I would start
