I would like to add a hyperlink into invoices and statement (for payment links) but I can't work out how.

If you just want the hyperlink to be displayed (eg like your other contact details), that's easy enough - You can just change the font colour of that label's data field to bright blue & add the underline.
Unfortunately, because RAH is not an entirely "Cloud" product (eg invoices & statements are stand-alone PDF attachments), it's not possible to click on a 'link' that can generate payment information.
