Salary sacrifice does not get added to Gross and Super for the wages declaration - correct?

Itโs normally considered part of the remuneration so usually itโs included. However some insurerโs/states may differ on this so check the insurer declaration info on what to include.

It does get counted for workcover and payroll tax purposes in Victoria

Thanks @Bruce Iโm in NSW and I think the client has decided to include it just to be on the safe side
