There are mixed messages on what to do, can we just take out the release date if we wish to rehire an employee. If not, what can we do?

Was the employee, who you are now rehiring, terminated in the current financial year? Or in a prior financial year?
He was terminated due to ill health on the 23rd December 2023. This is the second time he has asked to return, last time I just put him on as a new employee.

If the employee was terminated in a prior financial year and has since been finalised in that financial year's EOFY, which in this case it sounds like they have, then you can simply remove the Release Date from their profile.
