Go to Edit-Preferences-Send Forms
You can alter your default text for each of the various forms that are emailed.

Hi Tess,

You need to be in single-user mode to make any changes (only applies if you have more than one user-licence so don't worry if this is NOT the case) and have 'Admin' role rights to adjust the forms.

Go to Edit --> Preferences --> Send Forms --> Company Preferences TAB --> use drop box selection for various email forms to get the one you want --> adjust as desired and hit 'OK;
