I would like to know if there is a report I can pull for statements that have been emailed

    Not specifically although you should be able to see this under View Email Report:

    Some users set their own email address in the Bcc for emails, in order to have a record in their own mailbox:

    (You can always create a Rule to automatically move these into a designated folder that you set up, so they don't clutter your Inbox 😊)
