How to change text in email body

We've recently hired someone who now looks after invoicing etc. My name is currently in the email body when we send invoices, quotes etc. How can I change the text in the email body? (as per below image)

Edit > Preferences > Send forms > Company Preferences > Change default for eg. Invoices .............
